I recently asked Anthony which dishes that I cook are his favorites. As usual ,he was completely indecisive. I decided to write about on of my favorite things to cook. I am a pasta lover and I make a Chicken Alfredo dish, but I messed with the recipe and made it my own. I call this dish Chicken Alfredo Thingy because along with the chicken, it has bacon, tomatoes, and spinach. So here is the recipe:
Things you will need: 1-1/2lbs of Chicken Breasts Cooking oil of your choice Seasonings of your choice for Chicken TBSP of Minced Garlic (feel free to use less or none.) 1-2 cups of Spinach (I love spinach, so I put a lot.) ½ cup of Chopped Tomatoes (I usually just eyeball it.) 4 strips of Bacon cut small 1 pint of Heavy Cream ½ cup of Shredded Parmesan Cheese ½ cup of Shredded Mozzarella Cheese Angel Hair Pasta (use however much you want because I don’t measure my pasta.) Optional: Mixed Vegetables as a side Instructions on cooking: Chop chicken breasts into small pieces. I guess culinary people call this cubing? Sorry, I am not a professional chef. :P Put it in a frying pan with a little bit of oil and season it to your liking. Cook chicken at a medium heat until fully cooked. Start boiling water for your pasta. Then, I chop my bacon and fry it at a medium heat until it is close to being crispy. Then I add my Spinach, Tomatoes, and Garlic to the frying pan with the bacon. (Feel free to drain some of the bacon fat prior to adding the other ingredients. This dish will be greasy.) Once the Spinach, Tomatoes and Garlic are added sautee them for a few minutes until they are soft. Once they are soft feel free to add more of any of those ingredients as desired. Then start the Alfredo Sauce. Pour Heavy Cream into the frying pan with the Bacon, Spinach, Tomatoes and Garlic. Then add the Parmesan and Mozzarella Cheese. Mix the Heavy Cream and Cheese every few minutes until Cheese is melted, and your sauce is a consistency you like. Don’t forget to cook your Pasta! Once pasta is cooked, drain water and put Pasta back into the pot you cooked it in. Add the Chicken and Sauce into the pot with Pasta as well. Mix thoroughly and serve. I am not very good a giving instructions for cooking, but I hope this made sense. If you try it, please send me a picture! I hope you all enjoy this dish.
