I've been on an avocado craze lately and decided to make a few different recipes that involve the healthy delicious fruit. I made Avocado Egg Salad. I got this recipe from the YouTube Channel Blogilates, and trust me guys, it is so yummy! Here is the recipe:
1 medium avocado, pitted and peeled 1 teaspoon lemon juice (I used lime) 3 hard-boiled eggs, peeled and chopped 1 tablespoon Dijon mustard 1 celery stalk, finely chopped 1 green onion, chopped Salt and black pepper, to taste Directions: Start by boiling your eggs. Next chop up all of your vegetable (or fruit for all you sticklers). Once your eggs are boiled then peel them and chop them. Then combine all you vegetables and egg by mashing them together add the mustard and salt and pepper. Mix it up well and serve! If you want to add some color to this recipe add some chopped tomato. I didn't do that because I had used all of my tomato up, and wasn't about to go to the grocery store for one item. I also ate this dish with Triscuit crackers but you can serve it any way you want!
