I am a girl who loves the outdoors. I love camping, hiking, fishing, and hunting etc. These outdoor activities bring me lots of joy. Last year, Anthony (my boyfriend) and Miguel (his cousin) went Elk (either sex) hunting and got a huge cow! We had so much Elk meat I had to get creative with some of my dinner ideas. For some, replacing beef with Elk is unnatural and needs to be stopped. But for others, replacing beef with Elk is no problem at all. We used a lot of the meat, but we still had a lot of Elk hamburger meat. I decided to recreate a meal I loved from my childhood. I made Beefaroni but with Elk meat! Ladies and gentlemen, I give you the recipe for Elk-a-roni.
What you’ll need: 1 pound of Elk hamburger meat. 2 cups shredded cheese. 2 cans of tomato sauce or one jar of spaghetti sauce. 2 tablespoons of butter. 1 box of elbow macaroni. Salt and pepper to taste. Garlic and Onion Powder to taste. Directions: Preheat the oven to 350 degrees F. Crumble the ground beef into a large skillet over medium-high heat. Season meat with Salt, Pepper, Garlic and Onion Powder. Cook, stirring frequently, until evenly browned. Drain. While the ground beef is cooking, bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, about 8 minutes. Drain, and stir in butter. Transfer to a large casserole dish, and mix in the ground beef, tomato sauce (or spaghetti sauce), and Cheddar cheese. Bake uncovered for 30 minutes in the preheated oven, or until heated through and bubbly. Prepping and cooking this meal takes about 45 minutes. It’s so easy to make and it’s yummy. Well, it’s yummy if you like Elk meat. This meal is not for everyone, but if you are one who has no issue gamey flavored meat then give this recipe a try!

I love smoothies! I love to drink smoothies as both a pre and post workout snack. It's something light that will give me enough energy before my morning workout, and it has enough protein and carbs to help rebuild my glycogen stores after the workout. In this post I am giving you a recipe for a pre workout smoothie that I absolutely love. This is the recipe for the Blueberry Muffin Smoothie:
1.5 C Frozen blueberries 1 TBSP maple syrup 1/2 c oats 1/4 tsp cinnamon 1/2 c almond milk 1 c plain coconut yogurt This smoothie is so filling and will give you the energy necessary before your workout.
