I really suck at naming dishes that I make, hence the super long name of this dish. But, this is my Green Chile Broccoli Cheddar Chicken and Rice. If you ever need a fast meal that is a lot healthier than fast food, this is a recipe for you! Here is what you will need:
2 decent sized chicken breasts 1 cups of white rice 1 cup of broccoli (cut up small) 1 cup of green chile As much shredded cheddar cheese as you like. Instructions: I start by cooking my rice. If you don't know how to cook rice it's a 2:1 ratio 2 cups of water to 1 cup of rice. While the rice is cooking I then grill my chicken breasts. I have a George Foreman grill so I use that to grill up my chicken, but you can fry your chicken on the stove as well. Whatever works best for you. Once chicken is cooked, let chicken rest for a few minutes before "cubing" your chicken. While you wait for your chicken to rest, check on your rice. Before it is fully cooked add broccoli, green chile, some cheddar cheese, and add a little bit of water to make sure the rice still fully cooks. You could also use some milk to make it creamier, I am lactose intolerant so I stick to water. Mix rice every few minutes until fully cooked. Don't forget to "cube" your chicken. Once your chicken is chopped up add it to rice mixture then add more cheese if you so well please, mix thoroughly and serve! Most of the time I have no idea what I am doing when it comes to cooking, especially, because I am not a creative person, but I was pretty proud of this because it actually came out decent! Like I said, it's a quick easy meal that is a lot healthier than fast food. It's definitely a cheese lovers dream. If you try it, as usual, please show me pictures on Instagram!
